We all know it has been one of those years... yes life has given many of us lemons this year! I know that is a metaphor but in all seriousness, it is lemon season now and if you are lucky enough to know someone with a tree of have one yourself... likelihood is you have more than you know what to do with!

This recipe is a take on an Italian recipe. It is a flat cake with a slightly course texture and crumb, but has a delicious intense flavour from the zest and addition of the lemon syrup that is poured on the finished cake. 

I made this cake for Pru's birthday in May and it was a hit with the family. I have made it several times since and it has worked out well every time. 

Why not make it this weekend? Beautiful served with the addition of whipped cream and perhaps a sprinkle of blueberries or some edible flowers to garnish the plate. Yum!
